It was natural selection; the weak were destined to be eliminated. The Mutated poultry didn’t gain Superpowers; they simply developed melanin, enabling them to survive in the apocalypse. However, this alone wasn’t enough for them to reproduce prolifically.

"TSK TSK. Jinhua Pigs, and sows at that! Do you know how famous Jinhua Ham used to be? Now Jinhua Pigs are nearly extinct. This Celebrities Gathering is hardly just a bankruptcy auction," Mr. Jing lamented.
