When rolling out the dough skins, Du Xixi intentionally rolled it so that the center was thick and the edges were thin. This way, when placed in the pan, the thick bottom would slowly become crispy under the pan’s heat, making for a better texture when eaten.
Once the bun bottoms were half-cooked, the slightly diluted flour water was evenly poured over the Shengjian buns, filling the gaps between them. This also helped make the bun bottoms even crispier.
Some people like to use starch water, but it easily makes the buns stick to the pan and become mushy, unlike flour water, which is more effective. So Du Xixi preferred using flour water to create crispy bottoms for the Shengjian buns.
After covering the pan with a lid for about five or six minutes, the flour water had already dried when Du Xixi opened it. She and 2569 together brushed a golden transparent layer of oil and sesame seeds over the Shengjian buns, covered it again, and waited for the buns to finish frying.
